Ingredients

  • 4 large Russet potatoes
  • 2 tablespoons olive oil
  • 1-2 teaspoons salt
  • 4 tablespoons butter melted
  • 1 cup shredded cheddar cheese
  • 1 cup bacon crumbles
  • 1/2 cup sour cream
  • 1/2 cup sliced green onions
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 400°F.

  • Clean each potato by scrubbing off any dirt. Use a fork to poke 8 to 10 sets of holes in the skins of each potato for ventilation. Rub a small amount of olive oil on each potato. Season generously with salt and wrap each potato tightly in aluminum foil.

  • Place the wrapped potatoes on a baking sheet to catch any juices that may leak out. Bake for 1 hour, or until the potatoes are soft.
