Every so often, my favorite local pizzeria has specialty pizzas, and once, they had a bruschetta-style pizza with chicken that I’ve been thinking about ever since. So when I saw the latest offerings from Mama Cozzi’s in ALDI’s freezer section, I was delighted because Mama Cozzi’s Pizza Kitchen now has a thin-crust lemon pepper chicken bruschetta pizza.
Why I Love ALDI’s Mama Cozzi’s Thin Crust Lemon Pepper Chicken Pizza
The name of this pizza is quite a mouthful, but an actual mouthful of the pizza is so, so good. Though my family adores the fresh pizzas in the deli section, Mama Cozzi also knows how to make a mean frozen pizza, and this new flavor is no exception.
A 13.3-ounce pizza costs $4.99, and the box says there are three servings. In my opinion, the average person could eat half the pizza, so it’s more like two servings per package, or one serving for a very hungry teenager.
The pizza has a crispy, thin crust that’s topped with a fresh-tasting lemon pepper tomato sauce. At first, I was skeptical that the sauce would taste good, but the lemon and the black pepper give the pizza that zingy taste of bruschetta.
The pizza is topped with chunks of grilled chicken breast, roasted tomatoes, and fresh basil, along with a blend of mozzarella, Asiago, and Parmesan cheeses. Oh, this pizza practically sings an Italian opera in your mouth. It’s just so tasty.
“It’s the sauce that makes this pizza,” my 14-year-old son told me. And I agree. Though the toppings are good and the crust is crispy, the sauce elevates this from average to extraordinary.
In fact, the sauce is so good that the next time I make a homemade pizza, I am going to experiment with lemon juice and black pepper to see if I can replicate it.
How I Prepare ALDI’s Mama Cozzi’s Thin-Crust Lemon Pepper Chicken Pizza
The instructions on the package call for cooking it right on the oven rack at 425°F for 12 to 15 minutes. I used my pizza stone instead, and since I have a convection oven, I cooked it at 400°F. I also barely cooked it for eight minutes, and it was almost overdone, so if you have a convection oven, check the pizza earlier.
I recommend using a pizza stone if you have one, as it makes the crust perfectly crisp. If you don’t, you can always follow the directions on the package for a great result.
